Learning to Cook at Top Chef University


Those of you who started out with me know I went MIA.  I can't decide whether that's an indictment of TCU or the biggest endorsement ever.  Having worked my way through the basics, I wandered far off the TCU path:  There are about a million recipes out there! I made time for a few of them. I deboned a duck, fileted a fish, baked some bread, smoked some salmon, planned a few menus, hosted a few dinner parties ... In other words, I achieved everything I set out to do when I signed up for TCU!  

Then, I wrote:  "I decided to enroll in Top Chef University to conquer my fear of cooking.  My goal is to cook for my wife for a month and have her smile at my food, not at the fact that I cooked at all.  Can I do it?"  

The answer, of course, was yes! And now I think anybody can.  Which brings me to February 2012 and the resuscitation of this blog.  You see, flush with success (and 15 pounds heavier) I've gotten curious about what I missed by stopping the lessons.  So I ordered the Top Chef University DVDs ... and I'm picking up where I left off.  I hope you enjoy the results!
